Eight Ideas for Thanksgiving Leftovers
Thanksgiving hasn’t even arrived yet, and already I’m talking leftovers. That’s because leftovers are the best part of the holiday, even better, in my opinion, than the meal itself. Pumpkin pie never tasted so good as when spooned straight out of the pie plate the morning after. Turkey, cold from the fridge, is at its finest layered up with stuffing and cranberry sauce onto a ridiculous sandwich. And mashed potatoes patted into little cakes and browned in a hot skillet? Yes, please. To help you take full advantage of every post-Thanksgiving morsel, I’ve gathered up eight Thanksgiving leftovers recipes. Perhaps one or more will come in handy this Friday when you are staring down a fridge full of goodies.

The lack of leftovers is the only bad part of going to a restaurant each year for the holiday. All those of us in the family who prepare the rest of the year’s holiday meals, however, will never, ever turn down my husband’s uncle’s invitation to eat out on Thanksgiving! I might have to buy some pumpkin to try out the enchiladas and milkshake recipes, though.

My mom has been known to cook a turkey breast and mashed potatoes the day after Thanksgiving when she has been a guest elsehwere and has no leftovers to play with. Canned pumpkin sounds like a whole lot less work, though 🙂
