I’m a sucker for south-of-the-border flavors. Whether it’s a spicy Mexican salsa, a creamy pot of beans, or guacamole in pretty much any form, I’m all in. This is probably why I’ve amassed such a collection of Mexican-inspired meals on the blog, many of which are entirely vegetarian. I’ve pulled together eight favorites to share here.
