Cashew Coconut Fig Energy Balls
These energy balls are a snap to make and tasty to eat. The figs adds naturally sweetness and pairs deliciously with lemon and coconut. Stash the energy balls in the fridge for a quick healthy treat or pre-workout bite.
Ingredients
- 1/2 cup dried figs (stems removed)
- 1/2 cup raw or roasted cashews
- 2 tablespoons shredded unsweetened dried coconut, plus more for rolling the finished energy balls
- Zest of 1/2 lemon
- Pinch salt
Instructions

Put all of the ingredients in a food processor fitted with a metal blade. Run until ingredients are pureed. If figs are very dry, add 1 to 2 teaspoons water to help the mixture blend.

Roll into 8 smooth balls. Roll balls in coconut. Store in a covered container in the refrigerator.
