Golden Parmesan Potato Bites

Here’s a riddle: what healthy snack can you prep for friends and family that is 1) a total crowd pleaser 2) calls for just three core ingredients 3) comes in at less than 25 calories a serving?

Parmesan Potato Bites.

These little bites are just the sort of nibble to help you make the transition from holiday over-indulging to New Year cleaner eating. They pack plenty of flavor with relatively few calories and a nice dose of nutrition. It’s a perfect snack to set out for bowl game gatherings, particularly since they don’t take much effort to make (I don’t know about you but I have a mild case of entertaining fatigue). Here’s all that’s required:

Small red potatoes, grated Parmesan cheese, and a container of La Terra Fina Greek yogurt dip. I used the Spinach and Kale version, but their Spinach and Parmesan or Spinach, Artichoke and Parmesan both work well too. A pinch of minced chives provides a little window dressing, but is not remotely essential to make this thing work.

As for La Terra Fina, it’s a relatively “new-to-me” brand that makes the cut as a better-for-you convenience food. It’s sold at specialty retailers as well as Costco, where I spotted it just last week. Once you’ve gathered your goods and cooked the potatoes until tender, all that needs doing is to spoon a little La Terra Fina dip on top, sprinkle on the Parmesan, and get it nice and brown under a broiler. And here’s more good news: you can make these ahead of time and reheat them just before serving.

Then all that’s left to do is watch them disappear (and enjoy them yourself), because at 25 calories a pop, why not?

Parmesan Potato Bites

A terrific, healthy snack that requires only a few ingredients and measures in at just 25 little calories a pop. They can be made earlier in the day and stored in the refrigerator until ready to serve. Simply reheat in a 400 degree oven until warm.

Ingredients

  • 1 pound small red potatoes (about 12 potatoes)
  • Olive oil
  • 1/4 cup La Terra Fina Parmesan Kale Greek Yogurt Dip & Spread (or other kale or spinach dip)
  • 2 tablespoons finely grated Parmesan cheese
  • 1 tablespoon minced chives (optional)

Instructions

  1. Put the potatoes in a medium pot and cover with cold water by 1 inch. Bring to a boil. Once the water boils, cook until the potatoes are tender enough that you can easily slide a paring knife into the center, about 12 to 15 minutes (time varies depending on size of spuds).
  2. Drain. Preheat the broiler.
  3. When potatoes are cool enough to handle, drizzle a teaspoon or 2 of olive oil over and coat them with your hands. Cut them in half and cut a sliver of potato off the bottom of each half so they sit upright without wobbling.
  4. Spoon 1 teaspoon of La Terra Fina Dip onto each potato. Sprinkle about 1/4 teaspoon of Parmesan over the top .
  5. Transfer potatoes to a baking sheet and broil until golden brown. Sprinkle a tiny pinch of chives on top and serve.
