Healthy Halloween Banana Ghost Pops

If there’s one thing my dad taught me as a girl, it was the upside of getting the most bang for your buck. Whether that means a great flea market find or a 10 dollar bottle of rosé, I appreciate getting the most for my investment. That includes an investment of time, which is why I’m all over this spooky kitchen craft. These Halloween Banana Ghost Pops take less than five minutes to make, but have a fun factor worthy of parenting brownie points.

A Healthy Halloween Treat

Unlike most Halloween treats, these guys are actually good for you.  Plus, kids will love them. The recipe calls for just three ingredients — bananas, yogurt, and a dozen teensy chocolate chips. You can tinker with the basic pops by embellishing them with shredded coconut (who says ghosts can’t be a little hairy in addition to being scary?).

How to Make Banana Ghost Pops

The ease of these banana ghost pops is perhaps their greatest appeal of all. Here’s the step-by-step:

  1. Start by cutting bananas in half on the diagonal.
  2. Insert a wooden popsicle stick into the center of each banana.
  3. Dip each banana into vanilla yogurt. Alternatively, you can make these with coconut yogurt. I don’t recommend Greek yogurt, which is too thick to easily coat the pops.
  4. Press two mini chocolate chips into each banana for the eyes.
  5. Set on a parchment-lined baking pan that you can fit into your freezer and freezer until solid.

While the pops are a terrific healthy treat for Halloween potlucks and parties, they aren’t particularly portable (unless you have dry ice). Enjoy them straight from the freezer.

Healthy Halloween Banana Ghost Pops

With just three ingredients, these pops take no time at all to make. To add a layer of flavor, sprinkle them with shredded coconut after you've coated them with yogurt. Then add your chocolate chip eyes.

Ingredients

  • 3 bananas
  • 3/4 cup vanilla yogurt (not Greek yogurt)
  • 12 mini chocolate chips
  • Special equipment: 6 wooden popsicle sticks

Instructions

  1. Line a 9-inch baking pan with parchment or waxed paper.
  2. Peel the bananas and cut them in half crosswise at a slight angle. Insert a popsicle stick into the cut end of each banana and push it about halfway up.
  3. Put the yogurt into a small bowl. Hold onto the pops by the popsicle sticks and roll each banana in the yogurt to coat the exterior (tilting the bowl so the yogurt pools on the side makes this easier). Let excess yogurt drip back into the bowl (you can run your finger along the back of the bananas to remove the excess). Lay the pops in the baking pan. You will have leftover yogurt.
  4. Push the pointy top of 2 chocolate chips into each banana to make the eyes of the ghosts.
  5. Put into the freezer to firm up, at least 3 hours.
  6. Remove pops from the freezer and use a knife to trim away any yogurt that pooled and froze along the sides of the banana.
  7. Serve straight from the freezer.
  8. Note: Once pops are frozen, store them in a resealable bag or covered container in the freezer.
