Get it into waffle iron, smash it down with the lid, and let it go crispy. Resist the temptation to eat it right then and there.

Waffle Iron Egg Sandwich
Ingredients
- 1 egg
- Salt
- Pepper
- 1 whole grain English muffin
- 2 paper thin slices favorite firm cheese (I used sharp Cheddar)
- 5 or 6 baby spinach leaves
- non-stick cooking spray
Instructions

Turn on the waffle iron.

While the waffle iron heats up, softly scramble the egg until just cooked; season with salt and pepper.

Split open the English muffin and lay one slice of cheese on the bottom half. It should cover the surface of the muffin. Top with the egg, spreading it evenly over the muffin. Top with the spinach followed by the remaining slice of cheese. Cover with the remaining muffin half.

Open the waffle iron and coat it with a little non-stick cooking spray. Put the sandwich right in the center. Close the lid and latch it if possible. If not, hold it down firmly with your hand. When the muffin is crispy and brown, transfer to a cutting board.

Use a knife to trim the sandwich into the shape of a heart.
