Of all the meals in our house, breakfast is the one that gets the most pushback from my kids. I’ve heard everything from “I’m not hungry,” to my most recent favorite, “breakfast just isn’t my thing.” Ironic since it’s also the one meal that I really and truly want them to eat. No appetite at dinner? No sweat. But walk out the door in the morning with an empty stomach? Not so fast. What I’ve found on those days, is that if I take the time to prepare something tasty and manage to get it front of them, they usually find their appetite and ultimately, bound out the door energized. The challenge often is coming up with fresh ideas.
