Smoothies are standard fare around here all year round, but they never taste so good as in summer. So I thought I’d do a series of posts featuring four favorites. They’re recipes I developed for Cooking Light Magazine that run the gamut from mega-nourishing to sweet treats. All will fill the bill for cooling you off on a hot summer day.
This first smoothie is ideal right about now since it features cucumber, a summer garden staple that is especially cooling. This recipe is a gentle introduction to “green smoothies” if your kids are accustomed to fruity ones.
Cucumber Apple Mint Cooler
Servings 2 servings
Ingredients
- 1 cup chopped seeded peeled cucumber (about 1/2 pound)
- 1/3 cup unsweetened frozen 100% apple juice concentrate , undiluted
- 1/4 cup cold water
- 1/4 cup chopped fresh mint
- 10 ice cubes (about 4 ounces)
Instructions

Place all ingredients in a blender; process 2 minutes or until smooth.

Serve immediately.
