Wild Blueberry Coconut Yogurt Pops with Just 4 Ingredients
Thanks to the Wild Blueberries Association of North America for sponsoring this recipe
T’is the season for frozen treats and these marbled beauties are a good way to begin. They’re Wild Blueberry Coconut Yogurt Pops, which means that gorgeous color comes not from artificial food dye, but from the magic of mother nature. Indeed, the vibrant hue is thanks to wild blueberries, and more specifically to the brightly colored antioxidants that live within this tiny fruit.
Here’s more good news about these pops: they’re easy to make. Simply cook down frozen wild blueberries with a splash of maple syrup until good and juicy. Then, stir gently into your favorite coconut-flavored yogurt (ideally one with minimal added sugar and no artificial ingredients). Finish up by filling your pop molds and putting them in for a deep freeze.
Frozen pops are one of my go-to desserts for summer entertaining, since there’s no plates, forks, or clean-up involved. They also make a tasty afternoon treat, all at under 100 calories each.
