This is a something-for-everyone kind of week. We’ve got plenty here for vegetarians, but also a cozy dish of pork chops with apples (that has an excellent pan sauce). Also, don’t miss the Baked Eggs for breakfast. So simple and good.
Baked Tofu Parmigian
My daughter just made this for her college roommates, which tells you how easy and budget-friendly it is. The tofu is breaded and baked until crispy and then layered with sauce and cheese. Add roasted broccoli (or the broccoli recipe below) and dinner is done. Leftovers are tasty a day or two later.
Brothy Chickpeas with Garlic Croutons
These braised chickpeas taste like comfort in a bowl. They stew in a flavorful broth, then get topped with crunchy garlic croutons, and finished with a drizzle of olive oil. Nourishing and delicious.
Easy Chicken Paillard
The combination of capers, shallots, and white wine is undeniably delicious spooned over chicken. The dish is made entirely on the stovetop, and because it’s done with pounded chicken breasts, it’s a fairly quick-cooking dish. On the side, try arugula and cherry tomatoes tossed with this vinaigrette or a grain dish like this one.
Easy Pork Chops with Apples
This is simple comfort cooking and doesn’t call for anything fancy. The chops are accompanied by a tangy sour cream mustard sauce that is kind of a game changer for the dish. If you don’t have apples, use figs, pears, or serve with a bowl of applesauce.
Roasted Broccoli with Hazelnuts, Tahini, and Raisins
Who is to say that a vegetable dish can’t double as a main course? This broccoli is a great example, embellished as it is with nuts and a satisfying tahini dressing. I’d suggest adding another salad or side dish (such as roasted root vegetables, these lentils or this tabbouleh salad), to make it a meal.
Barely Buttery Baked Eggs
This is a simple way to make delicious, delicate eggs with little effort. Get these in the oven or toaster oven while you make your coffee or get sandwiches into lunch boxes. Before you know it, breakfast will be ready.
Tahini Almond Butter Chocolate-Dipped Cookies
These wholesome cookies are one of my favorites on the site. They take minutes to make and can be done with or without the chocolate dip. Feel free to swap in peanut butter or another nut or seed butter for tahini.

14 ounces extra-firm tofu
¾ cup panko-style breadcrumbs
¼ cup finely grated Parmesan cheese
1 ½ teaspoons Italian seasoning

1 pound boneless skinless chicken breasts (2 large half breasts)
1/3 cup all-purpose flour
1 tablespoon grapeseed oil or canola oil

1 tablespoon pure maple syrup
