I‘m sharing hints of the summer to come in this week’s menu. I’m personally looking forward to doing sandwich night with that Chicken and Muhammara recipe and have some bananas going brown in my fruit bowl, so they will be ready for baking in a few days. Enoy!

SLOW COOKER PORK TINGA TACOS
Cooking pork low and slow in a crock pot with a serious hit of chipotle is an excellent starting point for weeknight tacos. From there it’s a matter of gathering your best taco fixings with a salad or street corn on the side.
SPRING VEGETABLE FLATBREAD PIZZA
Turn delicate spring produce into a pizza dinner starting with store-bought lavash and any favorite pesto. Just add a salad (try butter lettuce and shaved radishes with this vinaigrette) and you’re good to go.
TURKEY TACO SALAD WITH CUMIN LIME DRESSING
A satisfying, crunchy chopped salad tossed with old-school turkey taco meat. Top with crumbled tortilla chips and you’ve got a main dish meal on your hands. Finish with a plate of fresh, sliced pineapple.
ROTISSERIE CHICKEN SANDWICHES WITH MUHAMMARA
This recipe relies on a big shortcut: pick up a rotisserie chicken at the store. Muhammara is easy to make by just blending a handful of ingredients in a food processor. It’s a filling sandwich, but you can embellish your table with a simple salad, summer fruit, or cut up raw veggies.
HERB CREME FRAICHE WITH GRILLED VEGETABLES
Gather up your favorite grilling vegetables, get them good and tender on the barbecue, and whip up a side of herb crème fraîche to go with. It’s on the light side, so sliced crusty bread, brushed with olive oil and burnished on the grill makes a nice addition. Alternatively, make the grilled vegetables the side dish and throw chicken or chops on the grill as well.
ROASTED ASPARAGUS WITH LEMON AND CHOPPED EGG
I make roasted asparagus all throughout the spring, usually doused with lemon juice and olive oil. Here, a little chopped egg gets draped over the top to add interest and richness. Try it.
TENDER BANANA BREAD WITH WALNUTS OR CHOCOLATE CHIPS
This banana bread is I’ve been baking on repeat since I published the recipe last year. Make it with chocolate chops or walnuts (or no adornment at all) to enjoy for breakfast, snack, or dessert.

1 tablespoon extra-virgin olive oil
1 large yellow onion
1 large tomato
One 7-ounce can tomatillo salsa (~1 cup tomatillo salsa)

1 chipotle chile en adobo
1 tablespoon adobo sauce (from canned chipotle chiles)
1/4 cup low-sodium chicken broth or water
One 2 to 2-1/2 pound boneless pork loin roast
Spring Vegetable Flatbread Pizza
6 scallions (about 1 bunch)
1 1/3 cups asparagus
2 teaspoons extra-virgin olive oil
2/3 cup fresh or frozen English peas
Two 8×10-inch pieces whole-wheat or white lavash bread
1/4 cup basil pesto
3 to 4 ounces fresh goat cheese
1 lemon

1 pound ground turkey
1 packet taco seasoning mix
1 head Romaine lettuce
3/4 cup cherry tomatoes

2 tablespoons lime juice
1 tablespoon apple cider vinegar

Rotisserie Chicken Sandwiches with Pecan Muhammara
One 12-ounce jar roasted bell peppers
2/3 cup pecan halves
1/4 cup panko or other unseasoned bread crumbs
1 clove garlic
1 tablespoon lemon juice
1/2 teaspoon red pepper flakes or 2 teaspoons Aleppo pepper
1/2 teaspoon ground cumin
2 tablespoons extra-virgin olive oil
1 tablespoon pomegranate molasses (or 1 1/2 tsp balsamic vinegar + 1 tsp honey)
8 slices crusty bread, such as whole-grain levain
8 ounces shredded rotisserie chicken (~ 3 cups)
